In the context of this contract, we mean: •DUME: Single European Market Document; •Direct production kitchen: Kitchen in which meals are prepared just before consumption, with no or very limited use the hot bonding method; •Central kitchen: Kitchen in which meals are prepared a few hours before consumption, exporting the meals to nearby satellite canteens, maintaining the dishes at temperature by using the hot bond method. As part of this market, the Calevoet school is the only one to play the role of central kitchen, and exports dishes to the Merlo, Longchamp, Saint-Job, Verrewinkel, Center and Écureuils schools; •School satellite: school that does not have a kitchen allowing direct production. The dishes are delivered there from the Calevoet kitchen.
