Lots: Salmon - Fresh frozen salmon fish, calibrated weight 7-8 kg, whole, gutted with head, at least 75 cm, frozen individually - UNBLOCKED, UNGLAZED. Must have a clean surface, natural light silver color on the back and white on the belly, completely covered with scales, be plump. The smell is characteristic of fresh fish, without foreign odors, without foreign impurities and tastes. The consistency of the meat is dense. The taste is characteristic of this type of fish, without any foreign flavors. Consistency after thawing it is dense, the smell of fresh fish without signs of spoilage, the gills are bright red in color without signs of rot, the eyes are not sunken, evenly convex. NOT ALLOWED: external damage, punctures, tears and damage to the skin, physical changes, i.e. changes occurring as a result of temperature changes. Shrinkage - subcutaneous fat becomes spongy, severely dehydrated, proteins undergo denaturation, recrystallization is the change from small ice crystals to large ones, which leads to a change in the histological structure of the tissue and color change. Defects of rust and old smell are not allowed. The product must comply with GOST 32366-2013, first grade. Packaging: Each individual frozen fish carcass is packed in a plastic bag and then in corrugated cardboard boxes, or boxes made of cardboard paraffinized on the inside.
