TECHNICAL TASK for the purchase of a press for forming pizza dough 1. General requirements Subject of purchase: Press for hot forming of blanks (crusts) for pizza. Model: Cuppone PZF/30DS (or equivalent with similar technical characteristics). Quantity: 1 (one) unit. Purpose: Forming a perfectly round base for pizza, due to short-term baking (forming a crust to protect the filling from moisture), ensuring uniform thickness and preserving the side. Delivery address: Kyiv, Generala Naumova, 292. Technical characteristics Maximum pizza diameter: up to 300 mm. Working range (dough weight): from 100 to 300 g. Body material: stainless steel (recommended AISI 304). Material of pressing plates: chrome steel, with the addition of copper for high thermal conductivity. Maximum plate heating temperature: up to 380° C. Controls: electronic panel. Safety: presence of a protective grid covering the plates. Productivity: at least 400 bases per hour. Overall dimensions (LxWxH): no more than 610 × 500 × 770 mm. Weight of the device: approx. 143 kg. Electrical parameters: voltage 380 V, maximum power: ~ 3.8 - 4.2 kW. 3. Design and functional requirements Separate digital thermostats for regulating the temperature of the upper and lower surfaces. Electronic adjustment of the gap (thickness of the dough) and contact time of the plates. The possibility of forming blanks with a traditional side. 4. Additional requirements (options / equipment) The procurement participant additionally provides the cost (if it is not included in the basic equipment) or is obliged to supply together with press: Floor stand (stand) for installing the press (for example, the Cuppone SPZF/30 model). 5. Requirements for the supplier and service The equipment must meet safety and hygiene standards for public catering establishments (HoReCa).
