Development of menus and supply of raw materials for the preparation of meals for the common Central Kitchen service of the Community of Communes South Vendée Littoral - 2 lots Lot 1: Development of menus for the Central Cuisine common service of the Community of Communes South Vendée Littoral The services are detailed within the CCTP dedicated to lot 1. The candidate is responsible for developing lunch menus on the days the central kitchen is open for all guests. The holder undertakes to offer menus aimed at respecting: - The standards set by the Collective Catering and Nutrition Market Study Group, the GEM RCN, or, failing that, by professional groups; - Decree 2011-1227 of 09/30/2011 and the decree of 09/30/2011 concerning the frequency of presentation of dishes and products to guests on 20 successive menus and its version which will be updated during the execution of the market; - The PNNS with its version in force during the execution of the service and its evolution as the service is performed throughout the duration of the contract (initial and renewals); - PNA 3: Compliance with the objectives of the National Food Plan: reduction of sugar, salt and fat and increase in fiber, - The requirements of the Egalim Law on the integration in value of 50% of sustainable products or under signs of origin and quality including 20% ​​of organic products at least, and 60% of meat and fish...
